EASY ROASTED POTATOES

Quick and simple way to inject flavor and spice up your meal!

PREP TIME:  5 MINUTES

TOTAL TIME:  35 MINUTES

INGREDIENTS

  • 2 LBS RED OR YELLOW SKINNED POTATOES
  • 2 TBSP OLIVE OIL
  • 2 TBSP KOKO KLASSIC*

INSTRUCTIONS

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Scrub potatoes (do not peel) and dice into 1 inch cubes.
  3. In a large bowl, combine potatoes, olive oil and Koko Klassic and toss to evenly coat.
  4. Spread potatoes evenly onto a large baking sheet and bake for 30 minutes until brown and tender.

*VARIATIONS

  1. If looking for some heat to go with the flavor, try using Koko Kickin' in place of Koko Klassic.
  2. For those seeking extreme heat, use Koko Kryin'.  But, I recommend decreasing the amount you add to 2 teaspoons to start with - adjust according to taste.

IF YOU HAVE EXTRA TIME

  • If you have time, you can get fluffier potatoes by first soaking them in cold water for 1 hour.  Make sure to drain and dry potatoes before coating in oil and seasoning if you do this step.
