savory ROASTED ALMONDS

Great topping for salads, main dishes & desserts! Perfect snack food anytime, anywhere!

PREP TIME: 15 MINUTES

TOTAL TIME:  60 MINUTES

INGREDIENTS

  • 4 CUPS SLICED ALMONDS
  • 1/3 CUP SUGAR
  • 2 TBSP KOKO KLASSIC
  • 1 EGG WHITE
  • 1 TSP WATER

INSTRUCTIONS

  1. Preheat oven to 300 degrees Fahrenheit.  Line a large baking sheet with aluminum foil, lightly spray with oil, and set aside.
  2. In a medium bowl whisk together sugar and Koko Klassic and set aside.
  3. In a large bowl, whisk together egg white and water until frothy.  Add sliced almonds and gently toss until the sliced almonds are well coated.
  4. Add the sugar and Koko Klassic mixture and gently toss until the sliced almonds are coated.
  5. Evenly spread the coated sliced almonds on the prepared baking sheet.  Bake for 45 minutes, stirring every 15 minutes.  The sliced almonds will begin to darken as the sugar caramelizes.
  6. Remove from the oven and let cool completely.  When completely cool, store in an airtight container for up to 1 month.

VARIATIONS

  1. Instead of sliced almonds, you can use cashews, pecans or a mixture of nuts
  2. For a slightly sweeter version, increase sugar to 1/2 cup.
  3. For a spicier version, use Koko Kickin' in place of Koko Klassic
  4. For a sweet and savory version, increase sugar to 1 cup or use 1/2 cup sugar and 1/2 cup brown sugar.  Can also add 1/2 teaspoon of vanilla extract to the egg white and water mixture.
